PRODUCE, DAIRY & POULTRY

My menus take full advantage of Maine’s seasonal bounty. The gorgeous fruits and vegetables, dairy and poultry they feature come from Maine organic family farms, such as Six River Farm in Bowdoinham, Bumbleroot in Windham, and Goranson in Dresden. The remaining ingredients are sourced from MOFGA certified organic farmers and artisans, the Portland Farmer’s Market, and the Portland Food Coop.

SEAFOOD

I source sustainably caught, premium fish and shellfish, fresh from the Gulf of Maine. I also consult with Monterey Bay Aquarium’s Seafood Watch Sustainable Seafood Advisory List when making selections.

RED MEAT

My dishes are plant-focused. I serve poultry and dairy, and the true star of the show is seasonal, organic produce and coastal Maine’s bounty of fresh seafood. In 2022, I made the decision to remove red meat from my menus due to livestock’s large carbon footprint and its impact on land, water, and biodiversity.

FOOD WASTE

I guide clients in their menu selections to ensure there is minimal food waste while still offering a bounty to their guests.

In the kitchen, I utilize as much of each ingredient as possible. If a tomato looks less than stunning, it will be roasted into caramelized perfection, broccoli stems are diced and tossed into soups or shaved into slaws, and shiitake stems make an earthy stock or gravy!

COMPOST

All food scraps, paper towels, and napkins are composted, thanks to Garbage to Garden.

CLEANERS

I use pop-up sponges made from vegetable cellulose that aren’t individually wrapped in plastic. The dish soaps and cleaners I use are plant-based and petroleum-free without artificial scents or chemicals.

containers

I bring reusable shopping and produce bags, and use reusable boxes when picking up ingredients. When possible, I select products without packaging, or that come in recyclable containers.

TO GO

Event leftovers are stored in paper containers for guests to enjoy. At private residences, I use clients’ reusable containers.

To keep my travel footprint low, services are only offered for venues within 90 minutes of Portland, Maine.
