PRODUCE, DAIRY & POULTRY
A celebration of Maine’s seasonal bount: The gorgeous fruits and vegetables, dairy and poultry all come from local organic family farms, such as Six River Farm in Bowdoinham, Bumbleroot in Windham, and Goranson in Dresden. The remaining ingredients are sourced from MOFGA certified organic farmers and artisans, the Portland Farmer’s Market, and the Portland Food Coop.
SEAFOOD
Sustainably caught, premium fish and shellfish, fresh from the Gulf of Maine. Monterey Bay Aquarium’s Seafood Watch Sustainable Seafood Advisory List are also consulted when making selections.
RED MEAT
In coastal Maine, the true stars of the show are the bounty of seasonal produce and fresh seafood. In 2022, red meat was removed from the menu due to livestock’s large carbon footprint and its impact on land, water, and biodiversity.
FOOD WASTE
In their menu design sessions, clients are guided in their selections to ensure there is minimal food waste, without compromising the sense of bounty for their guests.
In the kitchen, each ingredient is thoroughly utilized. If a tomato looks less than stunning, it will be roasted into caramelized perfection, broccoli stems are diced and tossed into soups or shaved into slaws, and shiitake stems make an earthy stock or gravy!
COMPOST
All food scraps, paper towels, and napkins are composted, thanks to Garbage to Garden.
CLEANERS
We use pop-up sponges made from vegetable cellulose that aren’t individually wrapped in plastic, and dish soaps and cleaners that are plant-based and petroleum-free without artificial scents or chemicals.

Reusable shopping and produce bags, as well as boxes are used, when picking up ingredients. When available, products and ingredients without packaging or that come in recyclable containers are selected.
TO GO
Event leftovers are stored in paper containers for guests to enjoy. At private residences, clients’ reusable containers are used.
CLOSE TO HOME
To keep the travel footprint low, services are only offered for venues in New England.
